Disgorged from a refill American oak Oloroso hogshead, displaying a good bead and yellow gold in colour. The nose has an interesting combination of aromas of smoke mackerel, black pepper, lapsang tea, and soot. Salted lemon, lime cordial, mackerel, apple and beetroot salad, fresh coastal air with salted butter on the palate that ends with a salty mineral peaty finish.
